Ingredients
Batter
100g of Rice Flour
50g Corn Starch
75 ml of Coconut Milk
225 ml Warm Water
1/2 Teaspoon of Ground Turmeric
½ Teaspoon of Sea Salt
2 Spring Onions, sliced thinly
Filling
300g of Chicken Breast, sliced thinly
100g of Prawns, skin removed
1 Medium Yellow Onion, thinly sliced
2 Cups of Bean Sprouts
3 to 4 Tablespoons of vegetable Oil plus extra oil for the pancake
Chopped garlic
Accompaniment
1 Head of Romaine Lettuce
Handful Coriander
Handful Mint Leaf
Handful Thai Basil
Dipping Sauce
4 Bird’s Eye Chilies, chopped
1 Large Clove of Garlic, chopped
6 Tablespoons of Fish Sauce
3 Tablespoons of Lime Juice
Instructions
1. Mix batter items starting with the dry (rice flour, corn flour, turmeric, sugar and salt) and drizzle the wet ingredients (coconut milk, water) and add in spring onions mix well until smooth
2. In a pan, add in some oil and stir fry about 5 slices of chicken breast with some yellow onion with a pinch of salt until cooked
3. In the same pan, spread the prawns and the chicken then add in a big ladle of the pancake mixture and spread evenly in the pan and cover the pan to cook the top for 1 minute
4. Next add in some bean sprouts and fold the pancake over and set on a plate. Continue until all the batter and protein is all cooked
5. In a bowl, add in all the ingredients to the sauce and serve with salad and the pancakes
Notes
Add in some sliced chilies to your pancakes if you want a bite of spiciness!
