Steam Fish

Description
This Steam Fish is the perfect dish to your Reunion Dinner this Chinese New Year. It super easy and fast to make. A great dish to make when you are short on time. Try this out for yourself and let us know what you think!
Ingredients
1 sea bass about 400g
4 spring onions
5cm Ginger half julienne and the other sliced into discs
2 Cloves of Garlic, sliced
2 Tablespoons of Oyster sauce
4 Tablespoons of Light Soy Sauce
Salt and white Pepper to taste
1/4 Cup Vegetable Oil
Coriander Leaves for garnish
1 Red Chili, deseeded and julienne
Instructions
1. In a bowl, add in light soy, oyster sauce, chopped garlic, salt and white pepper and mix well.
2. Julienne 1 chili and half of the spring onions cut into 2cm lengths and half of the ginger is to be julienned as well
3. In a heat proof plate, add in the remaining ginger and spring onions into the cavities and under the fish before pouring the dressing over the fish and garnishing it with julienned chilies, garlic and more spring onions
4. Steam the fish in a bamboo steamer for 8 – 10 minutes
5. In a pot heat up the oil and add in some sliced garlic
6. Once the fish is cooked, pour the hot oil on top and serve immediately with a handful of coriander

You could have this dish on its own or with a bowl of steaming hot rice!
