3 ties soba noodles
2 Cups of chinese greens
Sesamee seeds (for garnish)
2 cloves garlic sliced
2cm ginger julienne
3 table spoons liquid amino
1 table spoon vinegar
1/2 teaspoon maple syrup
1. In a pot of boiling water cook the soba noodles for 4 – 5 minutes until cooked before removing and setting it aside in some cold water. This helps stop the cooking process and stops the noodles from sticking together. Once the noodles have cooled, strain and set aside
2. In a pan, add in some oil and sautee the garlic and ginger until fragrant before adding the vegetable sand sautee on a high heat for 1 minute
3. In a large bowl, add in the liquid amino, vinegar and maple syrup before tossing the noodles and the cooked vegetables
4. Serve with a generous amount of sesame seeds
Add a little bit of sliced up chilies if you want some spiciness in your meal!
