Seriously Delicious Roasted Spicy Pumpkin

PUMPKIN SPICE & EVERYTHING NICE
Recently we created this super yummy roasted pumpkin that is going to keep you coming back for more!
Ingredients
1 small Local Pumpkin
4 garlic cloves, grated
2cm ginger, grated
1 lemongrass, grated
1 teaspoon ground cumin
½ teaspoon ground coriander
1 tablespoon chili flakes
½ teaspoon turmeric powder
3–4 tablespoons coconut oil
1 tablespoon honey
salt to taste
Instructions
1. Cut the pumpkin into wedges or cubes
2. in a large bowl add in the grated garlic, ginger, lemongrass, spices and chili along with olive oil, honey and salt and mix well
3. Coat the pumpkin with the mixture and mix well
4. place the pumpkin on a baking tray lined with baking paper and ensure its all spread out evenly 5. Place in the oven for 25 mins at 170C oven until cooked
Notes
Add more chili flakes in if you’re looking to have something spicier!
