Recently we made this Mushroom Chicken Porridge that is super yummy and the perfect comfort food to any cold day !

Ingredients

Scale

1 Cup of Rice

1 Litre of Water

250g Mince Chicken

4 Dried Shitake Mushroom, Soaked in some hot water

2cm of Ginger

4 Cloves of Garlic

2 Tablespoons of Sesame Oil

2 Tablespoons of Soy Sauce

1 Teaspoon of Corn Flour

A Dash of White Pepper


Instructions

  1. In a pot, add in washed rice, 1 cm sliced ginger and 4 cups of water and bring to boil until rice becomes porridge
  2. In a bowl, add in mince chicken, soy sauce, grated ginger, chopped up garlic, corn flour and mix well with a dash of water
  3. In a pan, add in some oil and add sliced dried shitake mushrooms and also the marinated chicken mince and stir fry for about 5 – 7 minutes until cooked
  4. In a bowl, add in rice porridge, top up with cooked mince chicken and mushroom stir fry, drizzle with sesame oil and top with chopped spring onions.

Notes

You could serve this with some chili oil if you’re looking for a little added spice!
