

Handmade Pan Mee Noodles

Description
A common Chinese noodle meal called pan mee (also known as banmian) features homemade noodles that are served in soup. The Hakka way of cutting the noodles into straight strands using a wooden block as a ruler gave rise to the name banmian. When ordering pan mee at the stall, you can choose from a variety of other handmade noodles like youmian or mee hoon kueh. Yet, we commonly refer to them all as pan mee. Heres how I make my Handmade Pan Mee.
Ingredients
480g All-Purpose Flour
20g Cornflour
1 large Egg
2 Teaspoon Salt
1 Tablespoon Oil
1–1½ cups Water
Instructions
- Combine the flour and salt together in a stand mixer with the dough hook along with 1 egg and salt. Beat on medium until it combines and slowly add in water.
- Continue mixing until a dough forms. Add more water if required or more flour if the dough becomes too sticky.
- Continue to knead the dough until it becomes smooth and elastic. Remove the bowl and cover it with cling wrap and set aside for an hour to soften.
- After the hour has passed, remove the dough and divide it into 2 or 3 smaller sections to be handled easier.
- Dust your work surface with cornflour and take 1 section of the dough and roll it out with a rolling pin. To spread the dough roll tightly after a sprinkling of corn flour and roll forwards about 5 times before opening the dough sheet and turning it 90 degrees, dust with more corn flour and repeat until you have the desired thickness.
- When you have the desired thickness of your dough, dust the surface and also the sheet of dough and fold it like an accordion, and slice to desired thickness. Any access dough can be placed in cling film and stored in the fridge for 2 days. Don’t forget to dust with more corn flour when making the noodles.
- Cook the noodles in a pot of boiling water for about 3 minutes and there you have it.

The dough can also be formed into various shapes, the most popular form is that of flat noodle strips. such as pasta!
