Ingredients
4 cloves garlic chopped finely
3 chili padi chopped finely
2 canned chopped tomatoes
500g large tiger prawns (shell removed)
400g clams or mussels or both!
250g salmon steak cut into large cubes (You can get a fillet of lemon sole, sea bass or any firm fish you like)
500g Pasta of your choice (I like to use spaghetti or angel hair pasta)
1/2 cup chopped fresh parsley
2 tablespoon fresh dill
1 tablespoon olive oil
1 lemon cut into wedges
1 liter water
good quality sea salt and black pepper
Instructions
- Prep the seafood and clean everything, remove the shell from the prawns, sprinkle some sugar (it helps with getting them plump) and put it in the fridge
- In a pot, add in 4 – 5 tablespoons olive oil, fry garlic and chili until fragrant and garlic is almost crispy. Add in canned tomatoes and a cup of water, salt and pepper and let it simmer for at least 10 minutes
- Time to cook your pasta to your liking (ensure hot boiling water that’s well seasoned with salt) and save 2 cups of the water for later
- Once pasta sauce is cooked and add in another cup of water to loosen the sauce slightly. Once its boiling rapidly, add in all the seafood you prepped earlier, stir the seafood in slowly, count to 10 and then close the lid and count to 10 again. Turn off the fire and let it sit for 10 minutes
- Add in the 2 cups of water you saved earlier to the pasta to loosen them up before mixing it with the sauce and drizzle with olive oil
- Scoop up your Marinara Sauce onto the pasta ensuring all guests get an equal amount of prawns, fish and also clams, sprinkle fresh dill and parsley onto the pasta with a drizzle of olive oil, crack of sea salt and a lemon wedge
