Nasi Ayam Burdock

This unique take of Nasi Ayam using some freshly imported Korean goods from KFresh such as Burdock, Asagi Gochu and array of mushrooms is a super healthy and easy dish to make for the family.

Ingredients

Chicken

1 Whole Chicken

1 Stick of Burdock, cut into large chunks

1 Inch of Ginger

4 Cloves of Garlic

2 Liters of Chicken Stock

¼ Cup of Goji Berries (Optional)

 

Rice

2 Cups of Rice 

2 Cloves of Garlic, chopped

1 Stick of Burdock, thinly sliced

¼ Cup of Golden Enoki 

¼ Cup Matt Oyster 

¼ Cup Shimeji White

Some Sesame Oil for frying

2 Tablespoons of Light Soy Sauce

Chicken stock for cooking

 

Chili Sauce

11 Asagi Gochu

4 Cloves of Garlic

1 Inch of Ginger

1 Korean Yellow Onion

½ Cup of Vegetable Oil

¼ Cup of  Vinegar

Some Salt and Sugar to taste

Instructions

To Make The Rice

  • In a pan add in the sesame oil and fry garlic, ginger until fragrant then add in the sliced burdock and fry for a few minutes before adding the mushrooms
  • Cook until all the moisture from the mushroom has evaporated before tossing the washed drained rice and stir fry for 1 – 2 minutes
  • Season with Light Soy sauce and then place the rice in a rice cooker with 3 cups of stock and cook.

To Make The Chicken

  • In a pot add in the chicken stock, bring to a boil before adding the Burdock, goji berries, garlic and ginger then add in the chicken
  • Bring to a gentle simmer for 10 minutes before turning the fire off and letting the chicken steam in the hot broth for 20 minutes

To Make The Chili

  • Roughly chop all of the ingredients
  • In a pan, add in the oil then add in the roughly chopped ingredients and fry for a few minutes until the skin of the chili blisters and the onion and garlic soften
  • Remove and add this to a blender, along with the vinegar, salt and sugar
  • Blitz until smooth and serve as a dipping sauce for the chicken and mushroom rice.

Serve

  • Once everything is cooked, serve the chicken with the rice and a side of the Chili Sauce while still hot.

Notes

To make sure the chicken is cooked through, poke a toothpick through the chicken and check the colour of the chicken juice that comes out. If the juice runs red, it is undercooked but if the juice runs clear, it is cooked through.
