Ingredients
Blended Items
1 red Onion
2 Garlic cloves
6 Red Chilies
Soup
1 liter water
2 sticks of lemongrass, bruised
3 Garlic cloves
5 Birds Eye Chili cut lengthways in half
1 inch of Galangal/Ginger
2 tablespoon salt
1 tsp Sugar
1 Carrot, thinly sliced
1/2 Cup of Cauliflower florets
1/4 Cup of Oyster Mushrooms
1/4 Cup of King Oyster Mushrooms
1 /2 white Onion, Thinly sliced
1 Cup of Baby corn, halved
2 fresh Tomato, Quartered
1/4 cup fresh lime juice
2–3 kafir Lime Leaves
250g Chicken meat on the bone, cut into small bite size pieces
200g fresh Prawns
2 Roots of Coriander, chopped finely
handful Coriander Leaves for garnish
Instructions
- In a large pot, add in the water then add in the lemongrass, birds eye chili, garlic and galangal or ginger and simmer for 1 minute
- Next add in all the blended items and bring to a boil and simmer for about 2 minutes
- Once the broth is simmering rapidly, reduce the heat and season with salt and sugar
- Add in the chicken bits and continue to cook on a medium heat and simmer gently for another 2 minutes
- Next add in the hard vegetables like the carrots and cauliflower before adding the rest of the vegetables and continue to cook
- lastly, add in the lime juice, kafir lime leaves, prawns and season with more salt if needed
- Just before serving add in the coriander root and garnish with coriander leaf
