Soba Noodles with Chinese Greens

Ingredients

3 Ties of Soba Noodles
2 Cups of Chinese Greens
Sesame Seeds (For Garnish)
2 Cloves of Garlic, Sliced
2cm of Ginger, Julienned
Dressing :
3 Tablespoons of Liquid Amino
1 Tablespoon of Vinegar
1/2 Teaspoon of Maple Syrup
If you are looking for a little spice, add some chopped fresh chillies to the top or sprinkle some chili flakes over it

Instructions

1.In a pot of boiling water cook the soba noodles for 4 - 5 minutes until cooked before removing and setting it aside in some cold water. This helps stop the cooking process and stopes the noodles from sticking together. Once the noodles have cooled, strain and set aside
2. In a pan, add in some oil and sautee the garlic and ginger until fragrant before adding the vegetable sand satuee on a high heat for 1 minute
3. In a large bowl, add in the liquid aminos, vinegar and maple syrup before tossing the noodles and the cooked vegetables
4.Serve with a generous amount of sesame seeds
