Skinny Kung Pao Chicken


2 x garlic, chopped
1 cm ginger, sliced
3 x dried chillies, cut into 3
1 x red/green pepper, cut into cubes
250g chicken breast, cut into small cubes
1 x carrot, chopped into cubes
1 x red onion, cut into wedges
A quick and simple recipe to enjoy without the worry of the extra calories. It's packed with protein from the chicken, fibre and Vitamins from the vegetables we can put in the dish and the richness in flavour you get from the marinade. Serve it with some steaming rice, be it brown or white, or just by itself is nice as well


1.Add in 1 tablespoon oil, dried chillies and fry the garlic and ginger and fry them until fragrant
2.Add in carrots and fry for 2 minutes
3.Add in the marinated chicken and brown on all sides
4.Add in onion and peppers and fry for another 2 to 3 minutes
5.To have some gravy, we add in some water
6.Serve it with white/brown rice or noodle of your choice. You can even eat it by its own with some mixed vegetables at the side
