Sesame Crusted Miso Salmon


300g of Boneless Norwegian Salmon Fillet
1 1/2 Teaspoon of Miso
1 1/2 Teaspoon of Thick Honey
A pinch of Ground Ginger Powder
A Dash of Japanese Chili Powder
3-4 Tablespoons of Lightly Toasted Sesame Seeds
Cooking Spray
Dried Herbs, Dill or Parsley
A good fresh cut of Norwegian salmon and simple ingredients in your refrigerator can result in a fusion bistro style dish that’s tastes as good as it looks!


1. Rinse salmon in cold water. Pat dry thoroughly.
2.Line a baking tray with baking paper. Spray lightly with cooking spray.
3.Preheat oven to 210 deg C. Use steam convection mode if your oven has this feature.
4.Combine miso, honey, ginger and chilli powders. Adjust taste to your liking, saltier, sweeter, hotter.... it’s your call!
5.Place salmon skin side down on prepared tray. Spread miso mixture onto salmon. Sprinkle generously with sesame seeds. Pat lightly.
6.Bake for 10 mins till sesame crust looks light golden. Reduce temperature to 190 deg C. Bake another 5-7 minutes. Salmon is done when a fork or small knife pierced through the thickest part slides in smoothly.
7.Sprinkle with dill or parsley. Transfer to serving plate and serve with a lemon slice and a side salad or boiled potatoes.

Never over cook salmon or it’ll be dry and too flaky
If unsure, test doneness as you go along and add cooking time in 2 minute intervals.
