Salted Egg Chicken


250g of Chicken, cut into cubes
2 x Tablespoons of vinegar
1/4 Cup corn flour
1/4 Cup rice flour
Cooking oil for frying
3 Tablespoons of butter
1 Egg
Salt & white pepper to taste
2 x Cloves of garlic, chopped up finely
3 x Slated egg yolks (steamed)
2 x Birds eye chili
2 Sprigs curry leaves
1/2 Cup evaporated milk
2 Tablespoons condense milk
2 cups of water
Extra for Garnish: Curry Leaves and chili padi
This Salted Egg Chicken recipe is so good it'll make you hungry just thinking about it! Check it out and try it for yourself!


1.In a bowl, add in chicken cubes, salt, pepper, vinegar and mix well and set a side to marinate
2.In another bowl combine corn flour along with rice flour
3.Crack an egg into the chicken mixture and mix well
4.In a wok, add in cooking oil for frying and heat up oil untill hot
5. Dip the marinated chicken pieces into the corn flour and rice flour mixture until coated and dust any access and fry chicken in hot oil, first making sure oil is hot and then reducing the heat to cook the inside of the chicken. continue until all chicken is golden brown and cooked
6. In a seperate wok, add in butter, chopped up garlic and fry for a minute before adding chopped up chilies and curry leaves and salted egg yolk
7. Add in evaporated milk and condense milk and season with salt and pepper
8. To make the gravy thick, add in corn flour mixture and then fold in the cooked chicken bits
9.Once done, serve in bowl and garnish with sliced cili padi and fresh curry leaves.

This salted egg chicken recipe is loved by many! You could even have this salted egg chicken with pasta, just add the pasta into the salted egg dish once it’s done, and give it a good stir. Garnish with sliced cili padi for that extra kick!
