Roasted Pumpkin Cauliflower Salad

Ingredients

1 small ripe pumpkin, about 1kg, peeled and cut into 3 cm chunks
500 - 600g cauliflower, cut into large florets
2 tbsp coconut oil or olive oil
1/2 cup grated coconut
1/2 cup cashew nuts, lightly toasted
1/2 cup fresh coriander leaves, roughly chopped
1/2 cup fresh mint leaves, coarsely chopped
1/2 cup fresh Thai basil leaves, coarsely chopped
Dressing:
Juice of 2 key limes (limau nipis)
2 tbsp fish sauce
2 tbsp grated palm sugar, or to taste
2 tbsp coconut oil or olive oil
1 fresh red chilli, finely chopped
2 tsp garam masala
1/4 tsp grated nutmeg, optional
Salt to taste
Coconut oil provides an interesting dimension to salad dressings. It is widely available in supermarkets nowadays. It is natural to observe some form of sedimentation in this oil due to its high melting point.

Instructions

1.Preheat oven to 220 degrees C.
2.Line your roasting pan with aluminium foil, lightly grease the surface. Place pumpkin and cauliflower on the pan with spaces in between.
3.Lightly brush the vegetables with coconut or olive oil. Season with salt and pepper. Roast for 30 minutes or till vegetables are browned and tender.
4.Meanwhile, pan fry coconut in a dry, non stick pan over medium heat till light golden.
5.For dressing, combine all ingredients in a jam jar. Cap tightly and shake vigourously to combine well. Adjust taste to your liking with salt and sugar.
6.To serve, line platter with some of the herbs. Top with roasted vegetables, coconut, cashews and remaining herbs. Drizzle dressing all over.
