Chicken Rendang Lecah

Ingredients

1 Whole Chicken
1 Yellow Onion
6 Cloves of Garlic
1 Lemongrass
1 inches of Galangal
3 inches of Ginger
2 Tumeric Leaves
1 Tablespoon of Chili Powder
2 Packets of Coconut Milk
Salt & Sugar to taste
This quick and easy Rendang Lecah is full of flavour and creaminess from the coconut milk. Best to be enjoyed with your whole family or during an open house !

Instructions

1.Chop the chicken into 16-18 pieces, set aside.
2.Blitz together the onions,garlic,ginger and galangal.
3.Hit lemongrass with the back of a knife and mix 2 packs of coconut milk with water
4.In a big wok, put in all the chicken, blended paste, lemongrass and coconut milk. let it simmer for about 20mins
5.Add in chili powder and chopped tumeric leaves. Let cook for another 5 mins and add salt and sugar. Serve Hot.
