Perfectly Roast Chicken with Potatoes

Ingredients

For The Potatoes :
2 Russet Potatoes, peeled and chopped into large chunks
1 Clove of Garlic, Chopped
1 Sprig of Rosemary, Chopped
Olive Oil
Salt and Pepper
Water to boil the Potatoes
For The Chicken :
1 Spring Chicken
6 Cloves of Garlic, Chopped
2 Sprigs of Fresh Thyme, Chopped
Salt and Pepper
Olive Oil
Any juices that fall onto the tray from the roast chicken can be used as the gravy to pour over your chicken when serving. Just bring it to a boil and add some cornstarch mixture to it and get a thicker consistency.

Instructions

1. In a pot add some water and 1 table spoon salt and add potatoes and bring to a boil until potatoes are half cooked. Drain and shake well to create some fluff around the edges of the potatoes
2. Drizzle some olive oil, salt and pepper along with chopped Garlic and rosemary onto the potatoes and shake it again until all coated
3.In a baking tray or casserole, add in the potatoes in one layer and set aside
4. In a bowl, add in chopped garlic, thyme, salt and pepper along with olive oil and mix well
5.Rub this oil mixture onto the chicken and also in the cavities
6.Place the chicken over the potatoes and set it into the oven at 175C and cook for 30 minutes or until the chicken skin is golden brown and crispy.
7.Once cooked, remove from the oven and let it sit for 5 minutes before serving.

Who doesn’t love some roast chicken right? We’ve made this super simple but so delicious roasted chicken with potatoes that are perfect for a dinner of 2. The pairing of both rosemary and thyme create this yummy and fragrant meal. Serve it along side with some salad and it will be perfect.
A tip to know when your chicken is cooked, poke it through with a stick  and if clear juices come out, it is cooked. Whereas if red juices come out, it may need some extra time cooking.
