Pasta Bolognese


6 tbsp mild olive oil
1 large white onion, chopped
4 cloves garlic, chopped
1 large carrot, diced
800g lean chicken breast meat/lean beef topside, coarsely minced
1 jar (690g) passata
1 1/2 cups chicken stock
1 tbsp mixed herbs, rubbed
2 bay leaves , torn (optional)
1 tsp salt or to taste
Freshly ground black pepper
Water for boiling
2 tsp salt
400g kids shaped pasta of your choice
2 tbsp olive oil
1 cup grated cheese
1/2 - 3/4 cup grated chocolate
1/2 cup chopped herbs of your choice (coriander/spring onions/chevril/thyme)
Passata is a liquid tomato puree that has been strained of seeds and skins. It provides a fresher taste and more vibrant colour to your bolognese sauce compared to conventional ready made pasta sauce, tomato puree and tomato sauce. Passata is now commercially available in most major supermarkets. If you cannot find it, replace with plain canned tomatoes of equal weight and blend it till smooth before using. I also prefer to mince meat at home with a meat grinder or food processor. That way you are sure of what your children are getting to eat.


1.Heat oil in a deep sauce pan over low heat. Fry onions and garlic until just softened. Add carrots and fry for 5 minutes.
2.Increase heat to high. Add minced meat and fry till lightly browned.
3.Add passata, chicken stock, herbs and bay leaf. (if using). Stir well. Bring to a simmer, then lower heat and simmer uncovered for 45 minutes to 1 hour. Stir occasionally to prevent sticking. The sauce will thicken and taste will intensify.
4.Season to taste with salt and pepper. If sauce is still too thin, simmer a while longer.
5.Bring a large pot of water to a rolling boil. Add salt and pasta. Cook according to packet directions. Drain well and toss with olive oil.
6.To serve, layer sauce and pasta on serving plates. Garnish with cheese, chocolate and chopped herbs.

Pasta Bolognese

We have boosted an all time favourite, Pasta Bolognese, for a nutritious, fun and delicious meal your kids will simply love. It is back to school time! So, they will need all the energy and brain food they can get and this dish will provide just that. Our Pasta Bolognese is bursting with protein from lean meat and fiber plus antioxidants from carrots, corn kernels and red kidney beans. Additionally, the “icing on the cake” is a bonus grated chocolate topping that will keep them wide eyed at the meal table. Prepare the Bolognese sauce the day before, like on Sunday afternoon. Allow to cool, then keep chilled in the refrigerator. On Monday after school, just boil your kids’ favorite pasta, reheat the sauce till boiling, garnish and Voila! We love you Mom! (and Dad!)
