Oven Fried Cornflake Chicken plus Special Mashed Potatoes


Cornflake Chicken
8 medium chicken drumsticks, about 1 kg, rinsed, fat trimmed
1 medium white onion, finely grated and squeeze the juice
1 tbsp garlic powder
1 tbsp brown sugar
1 tbsp ground paprika
1 tsp dried oregano, rubbed
1 tsp dried basil
1 tsp salt
1 tsp ground black pepper
1/2 tsp all spice (optional)
4 cups cornflakes, crushed, combined with 1/2 tsp salt, 1/2 tsp dried oregano
Vegetable oil, for coating
Japanese Style Mashed Potatoes
4 large Russet potatoes, about 800g
Water for boiling and 1 tbsp salt
1 tbsp butter
2 tbsp olive oil
1/2 tsp salt
1/2 tsp ground black pepper
1/2 cup - 3/4 cup Japanese style mayonnaise
1 small white onion, finely chopped
1/2 cup corn niblets
3 mini sweet peppers, finely diced
2 hardboiled eggs, coarsely chopped
For best flavour and juiciness, I have not removed the skin from the chicken. To minimize the fat content, trim off any excess fat surrounding the drumstick meat. However, you can remove the skin and fat completely, if you prefer a much healthier option for your family.


1.For the Cornflake Chicken, pat chicken really dry with kitchen paper towels first.
2.Combine onion juice with garlic powder, sugar, paprika, oregano, basil, salt, pepper and all spice (if using). Rub chicken all over with this mixture. Keep in the refrigerator in a covered container, overnight.
3.Next day, preheat oven to 180 deg C. Line a baking tray with aluminium foil.
4.Rub or spray chicken with some oil. Coat with cornflakes mixture, pressing the coating lightly to ensure it sticks. Place onto baking tray and bake for 30 - 40 minutes, till cooked and golden.
5.For the Japanese Style Mashed Potato, place potatoes in a large pot and cover with sufficient cold water, 3 cm above the potatoes. Season water with 1 tbsp salt. Set over high heat and bring to a boil. Reduce to a simmer and cook, covered for 15 - 20 minutes, until potatoes can be easily pierced with a fork. Drain potatoes in a colander. Allow to cool slightly, then peel the skins.
6.Dice 1 potato. Set aside. Mash remaining potatoes with butter, olive oil, salt and pepper. Season to taste, if neccesary.
7.Fold in mayonaise, diced potato and remaining ingredients. Keep chilled till ready to serve.
8.Serve chicken with potatoes and your favourite salad.
