Ingredients

2 cups of cooked rice
150g of dried anchovies
8 small birds eye chilli
4 cloves garlic
4 shallots
3 eggs
4 tablespoons of cooking oil
1 cup cut up long beans
3 tablespoons of sweet soy sauce

Instructions

1.In a lender, blitz together the shallots, garlic and 6 chillies.
2.Soak the dried anchovies in some water for a couple of minutes, drain and roughly chop them.
3.In a wok, add in oil and heat it up until it is hot. Add in the blended items and fry them until they are fragrant.
4.Add in the dried anchovies and stir fry for 5 minutes until they are crispy.
5.Add in long beans and fry for another 2 minutes.
6.Push the cooked ingredients to the side of the wok, and then add in some cooking oil and crack 2 eggs - season with some salt.
7.Scramble the egg and fold in the mixture.
8.Lastly, add in the cooked rice and stir fry for another 6 minutes until the rice is well coated with all the ingredients and fried thoroughly.
9.In a small pan, crack an egg in with some oil and fry a sunny side up.
10.Serve the sunny side up on the fried rice alongside with some sweet soy sauce and chopped up bird eyes chillies.
