Mango Beef Ribs


2kg x Beef ribs cut into 4cm (mixture of back ribs and short ribs)
1/4 cup mango chutney
1/2 litre water
6 x table spoon vegetable oil
1/4 cup sweet soy sauce
1/4 cup soy sauce
Salt and Pepper to taste
A sweet and savory twist of exotic flavor, beef tenderized with sweet mangoes almost sounds like a heavenly match!

Instructions to cook

1.Seperate as much of the marinate as possible from the beef for the searing process.
2.In a cast iron pot, add in some vegetable oil and sear the ribs until brown for a few minutes on each side and remove. Do this in batches
3.In the same pot, add a little more vegetable oil followed by the curry leaves, cinnamon stick, star anise before adding the marinate and fry for 6 - 10 minutes until golden brown before adding in curry powder and a bit of water if to dry and simmer for a few minutes before adding the seared beef ribs and mix
4.Add in the rest of the water, sweet soy sauce and light soy sauce and manggo chutney into the pot and mix well and let it simmer for about 10 minutes
5.Cover the pot, and place it in the oven at 140c for 3 - 4 hours until ribs are tender and fall off the bone. Alternatively you can remove the beef into a slow cooker and cook for 3 hours
6.Once meat is cooked, remove the meat and reduce the sauce to make a glaze (not necessary)
