Lobster Bisque


4 Lobsters Tails, weighing around 1kg
1 Cup Prawn Heads and Shells (optional)
2 Litre of Water (to boil the lobster)
2 Tablespoons of olive oil
1/2 Carrot, chopped
1 Celery Stick, chopped
1 Medium Onion, chopped
2 Cloves of garlic, crushed
1 Sprig of Fresh Tarragon
2 Tablespoons Tomato Paste
4 Tablespoon of vinegar
1 Cup of Heavy Cream
1/4 Cup of Long Grain Rice (soaked in water for 30 minutes)
Cayenne pepper, to taste
Salt to taste
4 to 5 Cups of reserved broth from boiling the lobster
For extra flavor, you could add in some fresh thyme before blending all the ingredients together.


1. Fill a large pot with 1/2 inch of water. Stir in 2 teaspoons kosher salt and bring the water to a boil. Add the lobster, cover with a tight-fitting lid and return the water to a boil. Once boiling, lower the heat to a gentle boil and cook the lobsters until they are bright red, about 12 minutes.
2. Remove the lobsters, reserving the liquid. When the lobsters have cooled slightly, place them in a bowl and remove the meat from the claws and tail, again reserving any liquid that comes out of the shells. Chop the meat and refrigerate. Roughly chop the shells into small pieces and reserve, along with all the lobster remains.
3.In a pot, Swirl in the olive oil, add the vegetables, herbs, tomato paste, vinegar, 4 cups of lobster broth, prawn heads and lobster shell, along with rice and bring it to a boil. Half way through add in more broth if needed
4. Once cooked. Place everything into a blender and blend it until smooth. Strain the broth through a colander, pressing down hard on the solids to extrude as much liquid as possible.
5.To serve, pour the bisque into a pan and add the cream and bring to a low simmer. Add the chopped lobster meat, let it heat through, then season to taste with salt and cayenne.


Lobster Bisque is a smooth, creamy, highly seasoned soup of French origin, classically based on a strained broth (Coulis) of crustaceans.It can be made from lobster, Langoustine, Crab, Shrimp, or Crayfish.
This lobster bisque is made up of carrots, celery, prawn shells, rice, and of course, lobster tails. You could also opt to use frozen lobsters, they are just as good.
All the ingredients are placed in a pot and brought to a boil and then blended together.
