In a pan, add in oil and fry onion and garlic until fragrant and almost caramalized then add belacan and fry for a few minutes before adding chili paste and cook for at least 8 minutes before adding tamarind paste
Cook chili paste for at least 10 more minutes before adding salt, sugar and kaffir lime leaves
Once cook, set aside
Clean and score the fish, place fish on a tin foil lined with banana leaf and spread the chili sauce all over the fish.
Wrap fish up with more banana leaf and bake fish in an oven at 170C for 15 -20 minutes
