Green Bean Coconut Sambal

Ingredients

4 tbs vegetable oil, like coconut oil or canola oil
1 tbs black mustard seeds, rinsed and drained dry
3 whole dried chillies, washed, seeded and cut into 1/2 cm pieces
1/2 cup yellow dhall (yellow gram), rinsed and drained dry
1 stalk curry leaves, washed and drained dry
2 tsp cumin seeds
1 tsp tumeric powder
2 tsp garam masala powder
1 medium tomato, diced
350g green beans, sliced at a slant
1 tsp salt, or to taste
1 large potato, cut into cubes and deep fried till light golden
1 cup grated fresh coconut, dry fried in a non stick pan till light golden
1 cup water
Sugar to taste
You can replace fresh grated coconut with desiccated coconut or even sweetened coconut flakes that are typically used for bakery food. Just dry fry them in a non stick pan till light golden. The final result will be just as good, and perhaps even more unique.

Instructions

1.Heat oil in a wok over medium heat. Add mustard seeds, cover and fry till they pop.
2.Remove cover, add chilies and dhal, fry till chilies are slightly crispy and dhal is light brown.
3.Add curry leaves and cumin seeds. Fry briefly till curry leaves turn a bright green colour.
4.Add spice powders, tomato, green beans and salt. Stir fry for about 5 minutes
5.Add potatoes, coconut and water. Bring to a simmer and cook until beans are just tender and water has evaporated. about 5 minutes. Season to taste with salt and sugar. Serve hot
