Ingredients

500g beef sliced thinly
10 shallots
2 cloves of garlic
1cm of ginger
4 red chillies
1 lemongrass
1 can of tomatoes
4 pieces of kaffir lime leaves
1 litre of water
4 tablespoons of vegetable oil
salt and sugar to taste

Instructions

1.In a big pot, add in 1 litre of water and boil the beef until it is tender.
2.In a wok, add in the vegetable oil and fry the grounded shallots, chillies, ginger and garlic until it is fragrant.
3.Add in lemongrass and a can of tomatoes into the wok.
4.Add in a little bit of the beef stock from the stewed beef into the wok and cook for 10 minutes.
5.Add in the chunks of beed and add in a little bit more of the stock. Let it simmer until the gravy thickens up.
6.Add in some salt and sugar to taste along with thinly sliced Kaffir Lime leaves for garnish.
