Stir Fried Aubergine in Chilli and Soy Sauce

Ingredients

400g Aubergines cut into cubes
120ml of vegetable oil
4 garlic cloves crushed
6 cili padi crushed
6 tablespoon sweet soy sauce
40g spring spring onions chopped
Salt and sugar to taste

Instructions

1.In a pan, fry aubergines in hot oil until golden brown and set aside.
2.In another pan, add some oil and fry garlic and chili paste until fragrant and then add sweet soy sauce, fold in sauce with deezp fried aubergines and season with salt and pepper.
3.Add some chopped up spring onions for garnish.
