Description
Pad Krap Paw is traditionally made with minced meat this veggie option is a delight for those craving a spicy umami burst of flavor. I love a good hearty meal that can fuel my day-to-day as a mum/entrepreneur/content creator/wife/daughter/friend and everything all at once. I didn’t let go of carbs when I was on my PCOS diet and I still don’t cause I needed it to help me perform in my super active life. Love that not only are U.S. Potatoes super delicious in taste (it’s so distinctly tasty, fluffy when steamed and mashed and crispy when oven baked or stir-fried), it is packed with carbohydrates that have vitamin C, Vitamin D9, and potassium.
Ingredients
For Sauce
2 Tablespoon Light Soy Sauce
1 Tablespoon Vegetarian Oyster Sauce
1 Tablespoon Dark Soy Sauce
2 Tablespoon Water
1 Tablespoon Sugar
For Pad Krap Paw
450g Potato, Small Diced
5 Birds Eye Chili, Bashed (less if you want it less spicy)
5 Garlic Cloves, Finely Chopped
2 Large Handfuls Of Thai Basil
4 Tablespoon Oil For Cooking
For Serving
Fried 3 Eggs
3 Portions of White Rice
Instructions
1. Wash, peel, and dice your potatoes, soak them in water to remove the starch. Then drain and pat dry.
Fry the potatoes in hot oil until golden brown and set aside to cool or place in the air fryer for 15 minutes until golden brown.
2. In a bowl, add soy, oyster sauce, water, and sugar. Mix it well.
3. Heat 4 tbsp of oil in a skillet or wok over medium heat. Add the chopped garlic and fry it for a minute before adding the chopped chili.
4. Add the fried potatoes along with the prepared sauce and cook for 2 minutes.
5. Add in the basil and give a quick stir, turn off the heat. Serve it with hot rice with a sunny side up egg.
