Mini Sweet Potato Doughnuts
Recently we made this healthy mini sweet potato doughnuts that are super yummy!
You could have it just like this on it’s own, or make a sugar glaze and coat the doughnuts in it. So yummy! Try this recipe out for yourself and let us know what you think.

600g Orange Sweet Potatoes, peeled and scrubbed
30g Tapioca Flour
A Pinch of Sea Salt
Oil for deep-frying
Extra All-Purpose Flour for dusting
1) Steam sweet potatoes until cooked, mash them and then add salt and slowly dust in mixture of all purpose flour and tapioca flour until it becomes a dough like consistency
2) Knead the dough for a few minutes and then divide into 8 balls and make doughnut shapes
3) in a wok, heat up oil and slowly fry the doughnuts for 8 minutes until golden brown. drain on kitchen towel and serve.
4) Optional, in a shallow pan, add in some water and sugar and dissolve and make a syrup, then glaze the doughnuts on each side. Serve .
To avoid from having a super sticky dough, cool down the sweet potatoes before mashing them up. It’ll make it easier to knead and form the doughnuts.
