Kangkung belacan or water spinach cooked in chili and shrimp paste is a delicious flavorful Malaysian stir fry dish. Best served when hot with some rice and our very own Nestum Prawns.
4 fresh red chili pounded 2 cloves garlic pounded 1/2 red onion pounded 1 tsp shrimp paste 4 tbls oil 1/4 cup dried prawns soaked in hot water
Salt and sugar to taste
A big bunch fresh water spinach cut to seperate stem and leaf and washed throughly
Blend together garlic, onion and chili with a little of water until smooth
In a pan, add in some oil on a high heat then add in the shrimp paste and stir fry for a minute before pouring the blended items and sauté for 1 – 2 minutes
Next add in the soaked and drained dried prawns and season with some salt and sugar and sauce for 1 minute
Lastly add in the water spinach and cook quickly until vegetable wilts
