For this blog post of the “Eat the Rainbow” series, we have one of my favorite colors, Green! I can definitely say this colour is often associated with health, colour of growth, renewal and rebirth. It renews and restores depleted energy. It is the sanctuary away from the stresses of modern living, restoring us back to a sense of well- being as green is very zen and relaxing. Similarly in terms of the food we consume, green is well known for detoxification and ease the function of our bodies.
Consumption of green leafy vegetables such as kale, spinach, broccoli, bak choy are greatly impactful for health. They contain calcium, dietary fiber, antioxidants and vitamins like A and C. Antioxidants that are packed into these green foods neutralize oxygen particles before they cause damage, and are linked to lower incidences of cancer. Not only that, a rich green diet can also help maintain strong bones and teeth as well, promote vision health.
