Ingredients
1 Packet of Fresh Kuey Teow Noodles (Flat Rice Noodles)
2 Cloves of Garlic, chopped
2 Eggs
1.5 cups Taugeh (Beansprouts)
1/2 cup Chinese Chives
1 Tablespoon of Soy Sauce
1 Tablespoon of Oyster Sauce
1 Tablespoon of Dark Thick Soy Sauce
Salt and Sugar to taste
6 Tablespoons of Oil
6 Large Tiger Prawns
Blended items:
8 Dried Chilies, soaked in hot water
1 onion
1 Inch Ginger
Some Vinegar
Instructions
1. In a Wok, add in some oil and sautee the chopped garlic and prawns. Once cooked, remove and set aside.
2. In the same wok, add in more oil and pour in the blended items. Cook for 1-2 minutes until the oil rises then push aside in the wok, Then, on high heat crack in two eggs and scramble slightly. Add in the soy sauce, oyster sauce and dark soy sauce. Mix well before adding the kuey teow noodles in.
3. Cook on high heat for 1-2 minutes, while stirring.
4. Then, add in the prawns and garlic and mix well. After that, add in your taugeh and some chives. Quickly mix and serve it immediately.
Notes
You could also add in some kerang, also known as cockles into your dish!
