Description
A traditional cookie which most often served for Hari Raya but instead of ground peanuts, it is substituted with soy bean pulp. This was inspired by the Zero-waste concept where we didn’t want just throw away the Soybean pulp which was used for the soymilk.
Ingredients
Cookie dough:
560g Wheat Flour
5 Tablespoon Of Milk Powder
120g Corn Flour
1 1/2 Teaspoon Of Baking Powder
500g Castor Sugar
1 1/2 Teaspoons of Salt
560g Soy Bean Pulp
420g Corn Oil
For Decoration:
A Bowl Of Cranberries
3 Egg Yolks For Eggwash
Instructions
- To make the cookie dough, Prepare the dry ingredients by mixing the flour, milk powder, corn flour, baking powder, sugar, and salt together.
- Mix the soybean pulp with the dry ingredients. It should be in a crumbly texture.
- Slowly add the corn oil until it forms a dough.
- Roll the dough into small balls. Top it with cranberry and eggwash it.
- Preheat the oven to 170C. Bake the cookies for 20 minutes or until golden brown.
Notes
If you are allergic to nuts, this is the perfect recipe for you. You can use any dried fruits or nuts for the cookie decoration.
