Baked Fish Parcel with Garlic and Herb Butter
This is my “wow” dish for fish eaters. Something about baking these parcels and presenting it, just gets everyone super excited. You will be amazed by how simple it is!

Ingredients
600g an assorted array of fish fillet cut into chunky cubes (I like to use seabass, salmon and lemon sole)
200g good quality unsalted butter
1/4 cup parsley
2 x clove garlic finely chopped
1 teaspoon pepper
1 tablespoon good quality sea salt
6 x baking paper cut into 4 x 4 inch
6 x oven proof string
Instructions
- In a bowl, mix the soft butter with chopped parsley, garlic, salt, black pepper and mix well and set a side
- On the baking sheet place at least 100g worth of an assorted fish (so make sure you have one piece of lemon sole, sea bass and salmon), take a teaspoon of the herb butter and place it on the fish, hold up all corners of the baking sheet, scrunch it together and tie with a string and bake in the oven at 170c for 15 minutes
- After 15 minutes, place parcels on a big platter and serve with steams vegetables and grilled corn
