The trick to not getting the rice paper too soft, is to NOT soak it in water. Instead, wet your hands and lightly tap the rice paper all over until slightly softened. This will prevent it from tearing when you are rolling it.
Make sure to have this with the dipping sauce as it really brings all the flavors together!
So good to have it on it's own or you could even have it with some rice !
You could opt to remove the Cili Padi, if you are feeding this to the kids. They'll love it!
Make sure to let the chicken rest for about 30 minutes after taking it out from the oven, so that all the juices stay in the chicken and keeps it moist
Serve this with a side of Chili Oil to get an extra kick!
If you are looking for a little spice, add some chopped fresh chillies to the top or sprinkle some chili flakes over it
You could even pan fry some chicken and add it into your Quinoa if you would like some meat in your meal.
You could opt to use Chicken Stock instead of vegetable stock if you are looking for something more flavorful ! Garnish with fried onions for an added sweetness.
Any juices that fall onto the tray from the roast chicken can be used as the gravy to pour over your chicken when serving. Just bring it to a boil and add some cornstarch mixture to it and get a thicker consistency.
